The Gingerbread Man is an American folk tale passed down by word of mouth. It was first printed in May 1875 in St. Nicholas, an American children's magazine, under the title The Gingerbread Boy. The editor wrote that a girl from Maine had told it to the family's children, and that she had heard it as a child from an old lady. In other words, people had been telling it long before anyone wrote it down.
Folklorists call this kind of story The Runaway Pancake, type ATU 2025. It has relatives all over the world: in Norway it is a runaway pancake, in Russia it is a round little bun called Kolobok, and in Britain there is a runaway johnny-cake made of cornmeal. Gingerbread itself has a long history. It is baked from dough made with ginger and honey or syrup, and in English-speaking countries people love to bake gingerbread men around Christmas.
